Football Food

Here in Western PA, we love our kielbasa and smoked sausage.  To Hubs, a kielbasa sandwich is the perfect football food.  And for the next few months, kielbasa, smoked sausage and pierogies will be in heavy Sunday dinner rotation.  This is Hubbers favorite Sunday sandwich - grilled kielbasa with peppers and onions on garlic-grilled buns.  It's simple, stick to your ribs, football food.  You may need to spend all week at the gym...you know, workin it back off those ribs...


1 pound of your favorite smoked sausage or kielbasa
2 medium green peppers, sliced
1 large, sweet onion, sliced
1 tablespoon olive oil
4 sausage rolls
4 tablespoons butter, divided
4 teaspoons garlic powder, divided

1 - Add peppers and onions to grill basket (or aluminum foil tray) and toss with olive oil
2 - Grill peppers and onions over low heat until soft and slightly carmelized
3 - Grill sausage on medium for about 10 minutes (or until they blister and begin to char), turning at least once
4 - While everything is grilling, cut sausage rolls and spread each half with 1/2 tablespoon butter (or to taste)
5 - Sprinkle each half with 1/4 teaspoon garlic powder
6 - Remove sausage, peppers & onions from the grill
7 - Grill sausage rolls butter side up for 30 seconds - 1 minute
8 - Flip rolls and grill butter side down for 30 seconds - 1 minute
9 - Cut sausage into 4 equal portions and butterfly each piece
10 - To assemble, place sausage on bottom bun and top with 1/4 of the pepper nd onion mixture
11 - Top with bun
